Tomato Free Marinara Sauce over Steamed Zucchini

It was easy to take my No Tomato “Tomato” Sauce and create a No Tomato Marinara Sauce. Simply saute a little garlic, add the No Tomato “Tomato” Sauce and some fresh herbs.  Simmer for a few minutes and you’ve got yourself a very yummy marinara sauce!

The recipe is below but it isn’t an exact science because you can add as much or as little of the herbs as you prefer.

I served this over some steamed zucchini but you can serve it over any type of pasta or steamed vegetables that you wish.

Marinara Sauce
  1. In a sauce pan, saute the garlic in water.
  2. Pick some fresh herbs. They add such good flavor to any dish, especially this one!
  3. Add the No Tomato Tomato Sauce, basil and parsley to the garlic. Pull the leaves off the oregano and thyme sprigs and add to the sauce. Finely chop the rosemary needles and add also.
  4. Add the salt and a heaping spoonful of love. Simmer for 5 minutes. Adjust the seasonings to taste.
  5. Serve over cooked zucchini pasta or pasta of your choice.
Zucchini Pasta
  1. Peel the zucchini, if desired, using a vegetable peeler. Continue to "peel" the zucchini with the vegetable peeler making ribbons of the vegetable. Stop peeling when you get to the seeds.
  2. If you wish to use the part with the seeds, cut it into thin strips with a knife. Otherwise, discard it.
  3. Place the zucchini "pasta" in a steamer basket over a pot of boiling water. Cover and steam for 5 minutes or until desired doneness.
  4. Top with marinara sauce and enjoy!

Try to use at least fresh basil and parsley in the recipe. They really add a nice flavor! If you don't have the other herbs fresh then use 1/2 teaspoon dried Italian seasoning instead.

Thyme may be a problem for some people who are histamine intolerant, so omit it if that is the case. See this article for more information.
