Use my Tomato Free “Tomato” Sauce to make this recipe. It is yummy!
Tomato Free Marinara Sauce
- 1 garlic clove peeled and minced
- 1 tablespoon water
- 2 cups No Tomato Tomato Sauce
- 2 tablespoons basil (fresh) chopped
- 2 tablespoons parsley (fresh) chopped
- few sprigs oregano (fresh)
- few sprigs thyme (fresh) omit if histamine is a problem
- few needles rosemary (fresh) optional
- 1/8 teaspoon sea salt
- 1 medium zucchini per person
In a sauce pan, saute the garlic in water.
Pick some fresh herbs. They add such good flavor to any dish, especially this one!
Add the No Tomato Tomato Sauce, basil and parsley to the garlic. Pull the leaves off the oregano and thyme sprigs and add to the sauce. Finely chop the rosemary needles and add also.
Add the salt and a heaping spoonful of love. Simmer for 5 minutes. Adjust the seasonings to taste.
Serve over cooked zucchini pasta or pasta of your choice.
Peel the zucchini, if desired, using a vegetable peeler. Continue to "peel" the zucchini with the vegetable peeler making ribbons of the vegetable. Stop peeling when you get to the seeds.
If you wish to use the part with the seeds, cut it into thin strips with a knife. Otherwise, discard it.
Place the zucchini "pasta" in a steamer basket over a pot of boiling water. Cover and steam for 5 minutes or until desired doneness.
Top with marinara sauce and enjoy!
You can find the recipe for my No Tomato "Tomato" Sauce here. Try to use at least fresh basil and parsley in the recipe. They really add a nice flavor! If you don't have the other herbs fresh then use 1/2 teaspoon dried Italian seasoning instead. Thyme may be a problem for some people who are histamine intolerant, so omit it if that is the case.
