Instructions
  1. Put the 1 cup plus 2 tablespoons juice into a small pot.
  2. Sprinkle the tapioca into the juice and stir, using a wire whisk.
  3. Heat over medium heat, stirring occasionally with the whisk, until the mixture boils.
  4. Reduce heat to medium low or whatever is needed to keep the mixture simmering.
  5. Cook for 30 minutes, stirring every 5 minutes.
  6. It is important to stir often as the tapioca will stick to the bottom of the pan if you don't stir it often. I actually set a timer so I will remember to stir it every 5 minutes!
  7. Take the pot off the heat and allow to cool for 10 minutes or so. You can eat it warm but I usually eat it cold.
  8. Put the tapioca into a bowl, cover and refrigerate. This is even better the next day because the tapioca pearls have plumped nicely by then.
  9. Stir well before serving. Put into a nice dessert dish if desired.Fruit Juice Tapioca Pudding
Recipe Notes

I used Knudsen's Apple Juice and Let's Do Organic Tapioca Pearls for my recipe. Both are available at my local health food store. You can use any juice that you enjoy. I chose apple juice because it is low in histamine.
