Vegetable Soup

This soup is easy to make on the stove or in the Instant Pot. Add or subtract to the recipe according to your needs.

Ingredients

  • 4 to 5 cups water
  • 1 sweet potato (yellow flesh)
  • 2-3 carrots
  • 5-10 green beans
  • 1/2 - 1 zucchini
  • 2 leaves kale

Instructions

  1. Put the water into your pot or Instant Pot.
  2. Peel the sweet potato. Cut in chunks and add it to the pot.
  3. Peel the carrots, slice, and add them to the pot.
  4. Cut the ends off the green beans, cut into 1-2 inch pieces and add to the pot.
  5. Slice the zucchini, then halve or quarter the slices. Add to the pot
  6. Chop the kale (using stems if desired) and add to the pot. If cooking the vegetables on the stove, add the kale near the end of the cooking time.
  7. Add any other vegetables that you might want. Or leave out those that you don't tolerate.
  8. Set the Instant Pot to "Soup" and "1 minute". Start the machine. You can also cook the soup in a pot on the stove until the vegetables are tender.
  9. Let the Instant Pot do a natural release for 5 minutes, then do a quick release.
  10. Add sea salt to taste. (I use about 3/4 teaspoon.) Then add a heaping spoonful of love.

Recipe Notes

I made this in my Instant Pot, but you can use a pot on the stove if you prefer. This is one of those recipes where you can make as little or as much as you want, using the ingredients that suit your needs. I've been making this a lot lately because I have a cold.....
