Exploring a mostly whole foods, mostly allergen free diet
I have a cold and it is the worst cold I’ve had in a l-o-n-g time. UGH. When I get a cold, I like to make and eat soup. Before the whole food intolerance discovery, I would make chicken vegetable soup which had chicken in it (of course) and often tomatoes, potatoes, and whatever vegetables I had around the house.
Now that I’ve learned that potatoes don’t work for me and chicken often doesn’t work for me, I made this soup using the vegetables that do work for me.
Ahh….it feels good to eat something liquid-y and warm when I have a cold. I hope you don’t get a cold anytime soon, but if you do, cozy up with a nice cup of hot soup!
This soup is low histamine, AIP, vegan, and free of the top 8 food allergens. Add or subtract to the recipe according to your needs.
