Servings 1 person

  • 1/2 cup jicama shredded
  • olive oil
  • sea salt
  • pepper

  1. Peel the jicama. If you can find jicama that is not waxed, it is much easier to peel. (This jicama was waxed.)
  2. Grate enough jicama for each person. Allow at least 1/2 cup shredded jicama per person.

  3. Drizzle some olive oil into a non-stick pan.
  4. Add the jicama to the pan. Either add it in one piece, kinda like a potato pancake or add it in shreds.
  5. Cook for 5 minutes over medium heat, stirring occasionally, unless you are trying to keep it in one piece. If you are trying to keep it in one piece, just press down on it once in awhile with a spatula.
  6. Season with salt, pepper and a heaping spoonful of love. You can also add any other spice you enjoy and tolerate.
  7. Flip the "pancake" and cook for another 5 minutes. Or just keep stirring and cooking the hash brown shreds until they are as browned as you like them.
  8. Add more seasoning if desired.
  9. Enjoy!
