Oven Roasted Butternut Squash and Apples
This is a yummy side dish!

- 1 butternut squash
- 1 apple
- drizzle olive oil
- 1/4 teaspoon sea salt
Preheat the oven to 375 degrees.
Wash the squash. Slash with a knife, put on a plate and microwave on high for 5 minutes. (Microwaving the squash makes it a LOT easier to peel, seed and cut into chunks!)
Cut off both ends of the squash, cut in half, seed, peel and cut into bite size chunks. (Cut only enough squash for how many people you will be feeding. Save the rest for another meal if you don't use it all in this recipe.)
Put the squash into a bowl.
Peel, core and dice an apple. (Allow about 1/4 to 1/2 apple per person.) Add the apple to the squash.
Drizzle some olive oil onto the squash and apple. Sprinkle with salt. Mix.
Spread the mixture onto a parchment lined baking sheet.
Bake in a preheated 375 degree oven for 20 minutes. Stir. Bake for another 20-30 minutes or until everything is tender. Add more salt if desired. Sprinkle with lots of love!
I used a Honey Crisp apple, but most apples will work. I used pears once, which was very yummy, but I found out that pears didn't work so well for me so I'm not using them at the moment.
