Grilled Vegetables in Foil Packet

This is a super simple way to cook vegetables on the grill!

  • 1 zucchini thinly sliced
  • 2 carrots peeled and thinly sliced
  • 10 asparagus spears cut into pieces
  • drizzle olive oil extra virgin
  • dash sea salt
  • dash pepper optional (see notes)


  1. Wash the vegetables and slice or cut into pieces.
  2. Put into a bowl and toss with the olive oil, salt and pepper. Sprinkle with lots of love.
  3. Take a heavy duty sheet of aluminum foil and drizzle it with olive oil. Wipe with a paper towel so all the foil has been covered lightly with the oil.
  4. Put the vegetables on the foil.
  5. Fold the foil up around the vegetables making a sealed packet.
  6. Grill on one of the higher racks in the grill (if available) for about 6 minutes. Flip the packet and grill for another 6 minutes or until desired doneness.
  7. Enjoy!
