Grilled Vegetables in Foil Packet
This is a super simple way to cook vegetables on the grill!

Cook Time 12 minutes
Total Time 17 minutes
- 1 zucchini thinly sliced
- 2 carrots peeled and thinly sliced
- 10 asparagus spears cut into pieces
- drizzle olive oil extra virgin
- dash sea salt
- dash pepper optional (see notes)
Wash the vegetables and slice or cut into pieces.
Put into a bowl and toss with the olive oil, salt and pepper. Sprinkle with lots of love.
Take a heavy duty sheet of aluminum foil and drizzle it with olive oil. Wipe with a paper towel so all the foil has been covered lightly with the oil.
Put the vegetables on the foil.
Fold the foil up around the vegetables making a sealed packet.
Grill on one of the higher racks in the grill (if available) for about 6 minutes. Flip the packet and grill for another 6 minutes or until desired doneness.
Use any combination of vegetables you want!
