During the summer we enjoy spending time outside. We also enjoy cooking outside too. Recently, I’ve been grilling vegetables! I love taking some of the summer vegetables, tossing them in a bit of olive oil, sealing them up in foil and cooking them on the grill. It’s super simple and super tasty!
You can choose which vegetables work for you health wise. For me, I need to avoid tomatoes, spinach and corn. Most other vegetables seem to work well for me.
This combination contains carrots, zucchini and asparagus. I’ve also added celery and green beans to the mix.
