I love Mexican food! I was raised on it since I grew up in the Arizona and it is really one of my favorite types of food! But, Mexican food tends to have peppers in it (nightshade family) and cheese (high histamine). Both of those types of foods *seem* to be problematic for me so I’ve been avoiding them. I wanted to eat some beans that were flavorful, but didn’t have peppers, cumin or cheese in them. Mexican Pinto Beans is what I came up with. It’s easy to make and quite tasty! I made the beans in my Instant Pot but you can also make them on the stove or in a crock pot. Or, in a pinch, you can use canned beans that you rinse.
