Recently I was on a cruise ship with my husband and was trying to eat my typical diet that is mostly free of animal protein, mostly free of the top 10 food allergens and low histamine. This meant not eating a lot of what was offered on the ship! But fortunately, there were lots of choices in the form of fruits, vegetables, rice, potatoes and some legumes (very few legumes but at least there were some offered)!
There was always baked beans offered on the breakfast buffet, along with some rice. Dal was offered every lunch and dinner on the buffet. So, I ate a lot of baked beans and dal on our cruise! I also became known as the Vegetable Lady in the main dining room because I ate a lot of rice, baked potatoes and vegetables there, then went to the buffet for the dal. 🙂
When I got home from the cruise I decided to make my own “Baked” Beans and dal. I made my Baked Beans in the Instant Pot, so they aren’t truly baked but they are very good. You could make them on the stove or in a slow cooker too.
The dal is made on the stove. If you can’t find red lentils at your store you can buy some online here.
