I like hummus. Uh……let me say that differently, I love hummus! Why, you ask? You can dip vegetables into it, you can dip crackers into it, and you can eat it with a spoon. You can also use it to make sandwiches, but since I’m not eating bread right now, that isn’t one of my choices. It is so easy to make, so versatile and so tasty that if you haven’t had any recently, then make some!
I also love summer…..just love summer! And while August is still very much summer, it seems like it is nearing the end of summer. At least where I live…. at 7000 feet in the mountains. So I’m trying to squeeze every drop of summer out of summer that I can. And that includes eating summery kinds of foods, including foods that go on the grill. My family eats burgers, but I don’t because of various reasons. So I created a black bean and rice burger that is REALLY tasty and can be made on the grill, on the stove or in the oven. Check it out. This recipe came about because I wanted to make some beans and use up some cilantro and limes that were in my refrigerator. I chose black beans because I think they taste good with cilantro and I thought they would taste okay with lime juice added. And they did! They are so yummy! Check out this recipe:
