As it turns out, I pretty much cook every vegetable I eat in the Instant Pot! “Why?” you ask? Because they turn out so darn tasty! They are brightly colored, crisp, yet tender. In a word, they are Yummy! So now, that’s how I cook all my vegetables! Well, I take it back. Sometimes when I’m cooking just collard greens or kale I use the microwave. But everything else goes into the Instant Pot!
