With July 22nd being National Mango Day (who knew?) :-), it is a good time to share my recipe for mango salsa.
I also add diced mangos to my hot rice cereal that I cook in the morning and I add diced mangos to my salad at dinner time. Mangos are yummy! I hope you enjoy the recipe!
- diced mangos
- red onion
- cilantro leaves
- lime juice
- sea salt
Dice as much mango as you need for whoever you are feeding. Add it to a bowl.
Using disposable gloves, cut the top off the jalapeno pepper. Cut it in half and seed it. Dice the jalapeno and add as much as you want to the mango. The more you add the hotter it will be.
Add some diced red onion, a few torn cilantro leaves, a squirt of lime juice and salt to taste. Stir in a heaping spoonful of love.
Let sit for 30 minutes (if you can wait that long) to blend flavors. Serve with baked chips of choice or along with tacos or any food that sounds good!
