These burgers are super easy to make and require just three ingredients (besides salt and pepper). I made them when I was in a hurry and didn’t want to take time to chop onion for my original black bean and rice burger recipe.

Super Easy Black Bean Burgers
- 1 15 - 16 ounce can black beans
- 1/2 cup cooked short grain brown rice
- 1/4 cup canned pumpkin
- 3/8 teaspoon sea salt optional
- 1/4 teaspoon black pepper
Drain and rinse the beans and add them to a food processor. Add the remaining ingredients to the food processor.
Process until everything is well mixed, but still has some chunks in it. You might need to stop the processor once or twice and stir the mixture with a spoon.
Taste and adjust seasonings. Add a heaping spoonful of love.
Shape into 3 or 4 patties.
Cook in a lightly oiled pan, on a lightly oiled grill or or in an oiled grilled basket or piece of foil on the grill.
I cook and freeze short grain brown rice in 1/2 cup portions for use in this recipe. It makes it super easy to throw together these burgers. I also freeze the leftover canned pumpkin in ice cube trays. One cube is 2 tablespoons pumpkin so I defrost 2 cubes in the microwave on 50% power when I want to make this recipe.
