I made this delicious Red Lentil, Yam and Spinach Stew in the Instant Pot, but you can also make it on the stove. You can serve it over rice or eat it plain. You can substitute other greens for the spinach and it turns out great!

Red Lentil, Yam and Spinach Stew
- 1 cup red lentils
- 1 large orange yam peeled and chopped
- 1 onion peeled and chopped
- 2 cloves garlic peeled and diced
- 1 teaspoon olive oil
- 2 cups water
- 1 1/2 teaspoons tumeric
- 2 teaspoons grated fresh ginger (or use 1/2 teaspoon dried)
- handful spinach (or other greens)
- 1 teaspoon sea salt (optional)
- few dashes black pepper
Rinse the lentils, put them in a bowl and cover with at least double the amount of water as there are lentils. Set aside and allow them to soak for a couple of hours.
Drain and rinse the lentils and put them in the stainless steel inner pot.
Add the remaining ingredients except for the spinach, salt and pepper. You can add more water if you want a thinner stew.
Put the lid on the Instant Pot, turn the sealing knob to Sealing and push the Manual button. Set the timer for 3 minutes.
When the timer beeps, you can allow for a natural pressure release or wait 10 minutes and carefully release the pressure.
Remove the lid, add as much spinach or other greens (chopped) as you desire and put the lid back on to allow the heat to wilt the greens. You don't have to lock the lid on, just set it on to hold in the heat.
And the salt, pepper and a heaping spoonful of love!
Serve over rice or plain.
I've also made the recipe with kale and it turned out great also!
I've made this using both spinach and kale. It is delicious either way! I'm sure other greens would work well too. If you don't want to soak the lentils, use at least one more cup of water. I haven't made it without soaking the lentils so I don't know exactly how much water you would need, or if you would need more time. You can let me know if you make it that way! 🙂 It's nice to have an extra inner pot and a glass lid. You can make the rice first, then take that pot out, cover it with the glass lid and set it aside.
