This recipe is super simple, requiring just two ingredients: butternut squash and orange juice (plus salt if desired). Use the freshest orange juice you can find (or juice an orange yourself) for the best flavor. Make sure the orange juice is sweet tasting and not tart. This recipe only works if the juice is on the sweet side. Trust me on this! The first time I tried it, I used Evolution Fresh Orange Juice and it was SO good! Yum!

Orange Butternut Squash
This super easy recipe requires just two ingredients. It is easy to make in the Instant Pot and is so yummy!
- 1 butternut squash
- 1 cup water
- 1/2 cup orange juice
- salt (optional)
Put the metal trivet in the bottom of the Instant Pot. Add about a cup of water. Wash the butternut squash and set it on the trivet.
Put the lid on the Instant Pot and turn it to the locked position. Turn the Sealing Knob to Sealing. Press the Manual Button and adjust the time to 10 minutes. (I cook my butternut squash for 17 minutes because I live at 7000 feet in elevation.)
When it is finished cooking allow for a natural pressure release. Carefully open the lid, and allow the squash to cool for about 5 minutes. (This makes it easier to handle.) Take the squash out of the Instant Pot and set it on a cutting board. Remove the trivet and discard the water.
Cut the squash in half. Scoop out the seeds and discard. Peel the squash and cut it into cubes.
Put the cut butternut squash back into the Instant Pot. Add 1/2 cup orange juice. Make sure the orange juice is on the sweet side. It doesn't taste good with tart orange juice!!
Put the lid on the Instant Pot and turn it to the locked position. Turn the Sealing Knob to Sealing. Press the Manual Button and set the time for 5 minutes. When it is done, allow for a natural pressure release. If you are in a hurry, you can do a quick release after 5 minutes.
Remove the lid and mash the squash with a potato masher. Add more orange juice if needed, salt if desired and a heaping spoonful of love.
