Black Bean and Rice Burgers

Blacke Bean Burger2I rarely eat red meat because (1) it gives me headaches, (2) it makes the lipid levels in my blood rise to such levels that my cardiologist frowns and (3) I don’t really like it. So, I wanted to come up with a vegetarian burger that didn’t have soy, wheat, corn, nightshades or seeds in it, since I have trouble with those foods.

This patty can be cooked on the grill, in a pan, or in the oven. The recipe has only 6 ingredients, including sea salt and pepper. I like it a lot! Even my meat eating husband likes it! I hope you enjoy it too!

  1. Drain the beans and rinse them. Add the beans to a shallow pie plate or flat bottom bowl.
  2. Add the cooked rice to the beans. I used a combination of cooked short grain brown rice and red rice that I had on hand. It is one of my favorite rice combinations! See below in Notes for that recipe. I have no idea how well the burgers will hold together with long grain or another type of rice. If you prefer another type of rice, just try it and see!
  3. Put the diced onion and the minced garlic in a shallow bowl along with the 2 tablespoons water. Microwave on 50% power for 1 minute and 30 seconds. This helps to cook the onion and garlic just a bit before adding to the bean mixture. Here's the uncooked onion and garlic.

  5. Drain the water, and add the onion and garlic to the beans and rice. Add the salt, pepper and a heaping spoonful of love.
  6. Mash it all together with a potato masher. Taste a little of the mixture if you want, and adjust seasonings to your tastes.
  7. Form into 3 or 4 patties.
  8. Cover with plastic wrap and allow to sit for 30 minutes. If made ahead longer than that, then refrigerate.
  9. Grill the burgers on a grill, or cook in a lightly oiled pan (5 minutes on each side) or bake in the oven on parchment paper. If baking in the oven, bake at 350 degrees for 20 minutes, turning once after 10 minutes. (When you turn the burgers, you may need to hold one edge of the burger with a spoon as you slide the spatula under the other side of the burger.

  12. And here they are cooking in a pan on the stove. I wiped the non-stick pan with a bit of olive oil prior to cooking. They didn't stick at all.
