Hot Brown Rice Cereal with Fruit and Pureed Beans

Yes, you read that right….pureed beans! Right now I can’t eat nuts or seeds and I eat soy in limited amounts so I wanted to figure out a way to get some extra protein in my morning breakfast. I came up with adding pureed beans to my hot cereal and I love it! I cook my cereal this way all the time now!

My cereal is made with either  Bob’s Red Mill Organic Brown Rice Hot Cereal or Arrowhead Mills Organic Rice and Shine Hot Cereal. I’m sure other hot cereals would work too. I added some pureed Alubia Blanca beans from Rancho Gordo. Here’s a link on Amazon and here is one at Rancho Gordo.  I have also made the cereal with pureed Lima Beans. You can find out how I make the pureed beans in this post. I also add chopped peeled apple, pear and one medjool date to the cereal. (This cereal has all three fruits added.) YUM!

  1. I like to soak my rice cereal overnight, but this isn't necessary if you prefer not to. To soak my cereal, I put it in a deep bowl that I will cook it in the next day. I add plenty of water and cover the bowl with a plate. I let it sit overnight.
  2. The next day I drain the water off. I add 1 cup of water, 2-4 tablespoons pureed white beans (I use 4 tablespoons), some peeled, diced fresh fruit (apples and pears usually) and often 1 diced medjool date.
  3. I put the bowl in the microwave and cook it on high power for 1 minute. I stir it and cook it again on high power for 1 minute. I stir it again and cook it on 50% power for 1 minute. I continue cooking and stirring on 50% power for 45 seconds to 1 minute until the cereal reaches the consistency that I like. It will thicken on standing. Here you can see that the bowl I use to cook my cereal is a fairly deep bowl. This keeps the cereal from spilling over the edges while cooking.
  4. I add a heaping spoonful of love and enjoy!! Yum!!
