  1. Take the fresh pineapple and cut off the bottom. Slice off some pieces, cut them in half, cut out the core and cut off the rind and dice enough to make 3 cups. Make the pieces fairly small. Another way to cut up a fresh pineapple is to cut the top and bottom off the pineapple, slice it through the center lengthwise to make two halves, and cut those pieces again lengthwise to make 4 quarters. slice off the rind, and the core and dice the remaining pineapple.
  2. Using disposable gloves, cut the top off the jalapeno pepper. Seed it, dice it and add as much as you want. The more you add, the hotter it will be. I use 1/4 jalapeno because my husband and I prefer a milder salsa. (we are wimps when it comes to spicy things!)
  3. Add the black beans, onion and sea salt.
  4. Squeeze the juice of 1/2 a lime over the salsa and stir. Add some diced fresh cilantro leaves and a heaping spoonful of love.
  5. Enjoy!
